J&R smokers are legendary. Built tough in the heart of Texas, these heavy-duty machines are designed to withstand the rigors of commercial kitchens and demanding backyard enthusiasts alike. Their durability is a hallmark, a testament to their robust construction. However, even the most formidable equipment benefits from a little TLC. In fact, proper maintenance isn't just a suggestion—it's the key to unlocking their full longevity and ensuring they consistently deliver that perfect smoke and flavor you crave.

Daily Routine (Quick but Crucial)
Think of these steps as your smoker's daily hygiene – quick actions that prevent big problems down the line.
1. Drain Those Liquids!
After each use, it's crucial to drain any accumulated grease and water from the cooking compartment. This prevents rancidity, keeps your smoker cleaner, and reduces the risk of flare-ups. A special note: if you've been smoking poultry or seafood, make sure to drain these liquids immediately after cooking. The fats from these meats can go bad quickly and impart off-flavors to subsequent cooks if left in the smoker.
2. Manage Your Ashes (Safely)
The firebox is the driving engine of your smoker and it is constantly accumulating ash. Daily, you'll want to remove excess ashes from the firebox. However, don't get carried away! It's actually beneficial to leave a small bed of live coals. These will help ignite new wood more easily for your next smoking session, saving you time and effort. We use a common garden rake to push coals back and separate them from our ashes. Once the coals are out of the way, removing the unwanted ash is much easier. When you do remove ashes, safety is paramount. Always place the removed ashes in a metal container with a tight-fitting lid like these stainless steel ash carts offered by J&R. This container should then be placed on a noncombustible surface, well away from any combustible materials, patrons, and FOH Staff, until the ashes are completely cool. This simple step prevents potential fires, burns, and ashy flavors in product.
3. Quick Wipes for a Cleaner Look ( and Cook)
Before you call it a day, take a couple of minutes for some quick wiping. Clean the inside of the front doors of your smoker, as well as the firebox door. This not only keeps your smoker looking good but also prevents build-up of creosote and other residues that can affect performance over time. A clean door also ensures a better seal, maintaining consistent temperatures within your smoker.
These daily habits may seem unimportant and even a bit tedious at the end of a long, smoke-filled day, but they form the bedrock of proper J&R smoker maintenance.
