About MCR Barbecue
Award-winning executive chef Michael Rosen has over 20 years experience in the food service industry including high-end, fine-dining restaurants and high-volume establishments. Originally trained in French cuisine, Michael has worked with many celebrated chefs in Southern California including Patrick Jamon and Leonard Schwartz. While experienced with many cuisines, his true passion and expertise is American barbecue.
Chef Michael has knowledge of all aspects of the full service restaurant environment. That knowledge includes current consumer and industry trends, menu development, new restaurant openings, labor costs, kitchen operations, and quality control. Michael has mentored many cooks and is highly respected by both kitchen and dining staffs.
Through MCR Barbecue, Chef Michael is a factory agent and authorized dealer for J&R Manufacturing for the western United States.
